My New Go-To Recipe: Gluten-Free Almond Pancakes πŸ₯ž

I am really trying to not eat so much gluten. After trying many gluten-free recipes for pancakes, I have finally tried one I like. Though the batter is thick, they cook up pillowy and delicious. Bring on breakfast!

Gluten-Free Almond Pancakes

Dry

  • 3 cups gluten free flour
  • 1 and 1/2 cups almond flour
  • 2 Tbsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 scant teaspoon salt

Wet

  • 3 cups non-dairy milk
  • 1/2 cup water, as needed
  • 3 Tbsp unsweetened apple sauce
  • 1 teaspoon vanilla extract

INSTRUCTIONS 

Preheat a pan until vegan butter sizzles upon contact.

Combine all dry ingredients in a large bowl. Whisk well.

Combine all the wet in a medium bowl, mix well.

Add the wet into to the dry ingredients and stir until combined.Β If batter is too think, add a bit more liquid. Batter should be thick than regular pancake batter.

Pour batter and spread onto pan with the back of the spoon.

Cook until top is bubbly and edges look browned. Flip and repeat on the other side.

Serve!
