Red, Yellow & Green Rainbow Cookies🚦

Yeah yeah, the same amazing recipe made these beautiful babies. But just a few notes on ingredients: Before I left the country I had put some Silken tofu in the freezer. And as you probably know, frozen then thawed tofu has a drastically different texture. The tofu I used in the recipe was sponge-like and almost like tofu skin. I feel like it had a positive impact on the batter, specifically because the vegan butter I used (Melt) was really loose. (I used Melt because the price for Earth Balance has almost doubled in the last few months!) This was a really fluffy batch of cookies!

The special recipient was celebrating his 5-0 birthday and my friendship with him has spanned four decades and nearly half of his life. So he gets the cookies he wants!
