Growing up, St. Patrick’s Day was another reason to celebrate with a bakery cake. My mother dressed me and my siblings up celebrate our Irish heritage with dorkish results. Here is me and my brother dressed to the nines one such St. Patrick’s Day. Today I still like to honor my Irish roots… by making something festive. Irish Soda Bread would do the trick.
This recipe is a winner, though I had to sub two Tablespoons of the Earth Balance with solid coconut oil since that I Can’t Believe It’s Not Butter stuff is way too loose. And I had no currants or raisins… but I had goji berries! And caraway seeds, a must.
Dough is ready to go.
