Veggies for the Road πŸš—πŸ’¨

Sunday’s produce delivery will not go to waste! Since freshness is difficult to get on the road, I prepared some snacks that will hopefully survive my cooler. Firstly, fruits with skins are generally good travelers. So apples, oranges, and plums are already prepped.

But this huge beet would need some work. I thought I’d make beet chips for healthful snacking on the road. (But as I type this they are all in my belly already. Oops.)

Mandoline-sliced without incident… (it was the potato peeler on the butternut squash that had me slicing off my nail/finger)

After I sweat them with some salt, a slow roast in a 300 degree oven.

This is why they are all gone now. Salty, crispy beet. A really nice form for one of my favorite veggies.

Since I worry about the heat and staying hydrated, cut veggies with very high water content: JΓ­cama, carrot, green pepper, and green squash. Also hoping these survive in the cooler.

For a hearty sweet bite, the spiced banana oatmeal cookies. Though I haven’t been so into them as I loaf in my apartment, I believe I will appreciate them on the road.
