Eat the Stars

Well, donโt eat them if you have kidney problems. Starfruit, or Carambola, can kill you. But if your kidneys are thumbs up, this subtle citrus racks up high presentation points and an okay taste. Cโmon, what do you want? Inner and outer beauty and deliciousness?

Itโs the oxalate in the starfruit that can be deadly. Oxalate can bind minerals in the body, reduce mineral absorption, and increase the risk of kidney stones. Some also say that it can contribute to autism and vulvodynia, though research says this is unsupported. (Source)

The stars are nutritionally dense and have many health benefits. But your Gut has got to be functioning well to break down the oxalate. I have been really interested in learning about the Gut lately (Itโs so important that I capitalize it.) I watched a fascinating documentary on it called The Gut: Our Second Brainโฆ followed by Whatโs With Wheat?

Anyway, stars have been on my mind as I am impatiently awaiting the arrival of the Milky Way season! Meantime, Iโm spending my winter days planning Spring and Summer star shoots about our beautiful country.

Making a photo album for my star photographs. I feel like I am making a zine again! Making zines was such a huge part of my young adult life. Though the written words are cringe-worthy, their design holds up.
