Back in the Kitchen

Nothing makes me feel more at home then filling up my sink with dishes and cooking up a storm. Of course having to adjust my spending necessitates my making my own meals, it is an option I miss on the road. First, potatoes. I have a hard time with them because I can’t help but eat them up at the time of preparation… they’re supposed to last a week! These I boiled, smashed and roasted with a ton of olive oil.

I really liked this marinade I made though I never write or measure anything out. Transformed some tofu good and well. Not pictured is the kale I’ll sautΓ© with some coconut oil and salt because that’s all you ever have to do to kale.

And I’ll need a sweet. With some leftover almonds from the road, I made some chocolate chip cookies with almonds. Ok, I added some almond flour too. I like my cookies packed with protein.

Day 2 of 14 back in quarantine… small price to pay for a wonderful vacation. Now where to next??? Hmmmmm…
