A Batch of Vegan Peeps for Mom 🦭

So they may look more like seals than any Easter-y animal, but they are Vegan Peeps. Using my recipe from last year–which made quite the impression on my Mom, prompting the special birthday request–I made these beauties. If you want the recipe, see the aforementioned link. If you just want to bask in the fluffy, colorful adorableness.. . carry on.

Drying out the sugar is important. I believe the moisture impacted the firmness of the Peeps.

Every time I make a batch of marshmallow, I get giddy. Can’t believe I can make them myself.

Get as much in your bag as possible, because the rest will likely set in the bowl after a few minutes.

Eating some at my parent’s house. They were a hit!

Also you get a lot of chickpeas from needing the aquafaba… so I made hummus with the basil that was going bad. Win-win!
