Fudgy Beet Cake

If you hadn’t noticed, my Vegan Victuals Valentine Inspirations are unique and thoughtful sweet offerings for you or your loved ones. This is no exception–a delicious, decadent chocolate cake made of beets that is gluten free, easy to make, has a natural red hue and honors the worship of the almighty vegetable. Beets are for true vegetable lovers. While others shy away from their Earthiness, real deal vegans relish the opportunity to taste a hint of that Earth, the fertile expanse that births the entirety of our food choices.

So start with a couple of beets… poke them a couple of times with a fork, rub with olive oil and wrap them in foil. You will roast them until fork tender at 350 degrees, about 40 minutes. Let them cool and rub away the skin. That’s important. Alternately, you can peel them before you roast. The process them in a food processor. You will make the entire cake in the food processor, so give it a quick rinse after you scoop the puree into a bowl. Notice how easily the water washes away the bright magenta. That’s plant-based eating. Clean.

Use this very easy recipe, subbing pureed beet for the applesauce.

I only had chocolate chips to add to the center… that is why the chocolate didn’t ooze out like lava. When you make it, put thick chunks of a dark chocolate bar in the center. It’ll ooze out like in this this video.

I did a fancy thing with the cocoa I dusted on top. Just set a fork on the plate and sift the cocoa on top of it then remove. Again, the little details.
