Blue Spirulina Coconut Clusters

Blue Spirulina is one of the most gorgeous superfoods. The intense blue seems unearthly but it is most certainly of the natural Earth.

Besides its beauty it is packed with nutrition! It is a complete protein, contains Thiamin, Riboflavin, Copper, Niacin and Iron. It’s a potent antioxidant; its phycocyanin, which we thank for its gorgeous color, helps prevent inflammation and molecular degeneration. It also can lower triglycerides, reduce blood pressure, regulate blood-sugar levels, reduce anemia, enhance endurance and increase muscle strength. Finally, it has anti-cancer properties. Geez! No wonder it was so expensive! (I bought it here.)

E Q U I P M E N T 

Silicone pans of your choice (optional)

I N G R E D I E N T S

2 cups shredded coconut
6 Tablespoon corn syrup
4 Tablespoon plant milk, room temperature
2 Tablespoon coconut oil, melted
2 teaspoons blue spirulina powder

For Coating:
2 Tablespoon coconut oil
4 ounces dark chocolate

Garnish:
1 Tablespoon coconut oil
2 ounces dark chocolate

1.) Decide on your silicone pans, if using, and set on counter. Clear some space in your freezer for setting clusters.

2.) In a bowl, mix the unsweetened shredded coconut, the coconut milk, the corn syrup, the melted coconut oil and the blue spirulina thoroughly with a rubber spatula. After incorporated well, glove your hand and mix again thoroughly distributing moisture.

3.) With your gloved hand, press the mixture firmly into silicone pans. Then transfer to the freezer to set for about an hour.

4.) After, prepare your chocolate for coating. Melt coconut oil and chocolate on a double boil, mixing until smooth and removing immediately from heat. Let cool slightly while setting up your coating station.

5.) Carefully dip each piece in the chocolate using fork. Coat all sides and place on a cutting board or baking sheet coated with parchment paper. Return them to the freezer and let them set for at least 30 minutes. To make them fancier, melt some more chocolate and drizzle on the tops and garnish.
