Vegan in Fairbanks, Alaska
All the Breakfasts

There is fantastic vegan food in Fairbanks, Alaska. To follow, my morning eats.

First, Little Owl Cafe, a charming counter spot with very appealing vegan options.

My oat milk latte while I waited. I am not sure what oat milk they use, but this was just way too sweet. I never have sugar in my caffeinated concoctions, so I was kinda disappointed.

I had to get one of their vegan Belgian waffles, complete with coconut whipped cream and berry compote.

It was really damn good–great taste and texture.

Shoulda asked for syrup, but I inhaled it too fast.

Next on a snowy morning, hitting up the drive-thru at Sunsprout Cafe at Sunshine Health Foods.

After having a great conversation with the drive-thru employee, a delicious vegan breakfast sandwich! Tofu, a slew of colorful vegetables, cheese and mayo on a toasted bagel.

A side of their vegan potato salad because I was really in need of potato!

It is worth mentioning that again my oat milk latte was way too sweet! Hmmm…

Waiting patiently on the line for Summit Coffee, where i would get a really good (and not sweet) oat milk latte!

You can drive up and get yourself some vegan hot chocolate!

It was their vegan burrito with sausage, egg, cheese, hash brown, and spinach that reeled me in.

So please to have so many great vegan breakfast sandwiches to choose from.

I needed a nutritious breakfast and to grab something for lunch after a long drive and hike to Castner Glacier! I headed to South Fairbanks to Go Wild Juicery.

First, look at this vegan charcuterie board I picked up for post-hike. It had two types of vegan cheese (Mikoyo’s mozzarella in caprese kabob and Violife slices that were perfect with the crackers (not pictured). I cannot describe how perfect the board was after my hike. Every taste bud satisfied fully.

My Mean Greens bowl: açaí, banana, kale, spinach and spirulina topped with fresh strawberries, goji berries, chia seeds, chocolate chunks, blueberries, coconut and kiwi.

Soooo good. I really needed this ton of fruits and veggies after so many starchy breakfasts

I devoured every last bite.

Last but not least, Cafe Stir It Up in downtown Fairbanks on my last morning.

The first and only cupcake eaten in Fairbanks! I got the blueberry cardamon.

So pretty.

Another vegan breakfast sandwich!

Just Egg, sausage, cheese, greens, salsa and tortilla strips for texture.

I was able to hit all the places on my breakfast list and was so very pleased. Next up, what I ate for lunch. πŸ˜‹
