V.V. Overnight Oats

People sometimes want to know about my overnight oats. I whip up a big batch every Sunday to take care of breakfast for the week. They’re super easy, nutritionally dense and highly customizable. Though I usually just eyeball all of the ingredients, this time, for you, I kept track of everything. Enjoy this easy recipe and make it your own!

First a note about bananas:

If you have more ripe bananas than you can use, portion ’em, mash ’em and freeze ’em! I’ve found that this is the best way to freeze banana. If you freeze them unpeeled and whole, they turn a scary oily black color as they thaw and become very slimy in texture. It is kinda gross. Mashing it up before makes it far less scary.

Here is three week’s worth of oatmeal banana!

Overnight Chia Oatmeal

1 cup mashed banana (about 2 medium bananas)
2 cups rolled oats*
1/4 cup chia seed
1/4 cup Maca powder*
2 TB ground flaxseed
1 and 1/2 TB Agave nectar
1 tsp cinnamon
pinch of salt

3 cups + 2 TB plant milk of your choice
dash of vanilla

1.) In a medium bowl, mash banana until smooth. Add rolled oats, chia seed, Maca powder, ground flaxseed, agave nectar, cinnamon and salt.

2.) Add milk and vanilla to bowl and mix throughly getting rid of all powder lumps.

3.) Cover with plastic wrap and refrigerate overnight.

4.) Mix well. Add a bit more plant milk if too thick. Distribute into containers topping with fresh fruit, granola, coconut whip, whatever you want!

*Notes: You can use any kind of oats here. Quick outs suck up milk very easily and surrender to the moisture making a mushy oatmeal; steel cut oats resist milk making a firm oatmeal; rolled oats are the happy medium. I like when I have a mix of types to use as it gives a more varied texture. Buy some of each type in bulk and mix them up in your storage container.

I use Maca powder for its impressive health benefits, but you can use any super nutrient powder or completely omit it! But I find the oatmeal to be an easy vehicle for the goodies I would likely forget to ingest on a daily basis. That being said, I also put a powder called AM from Skin Friend which helps my eczema. Other addition ideas: plant protein powder, superfood blends, acai powder, cacao powder, matcha, spirulina, camu camu, Moon Dusts, etc.
