Thanksgiving 2022

This is me, Thanksgiving 2022, wearing my oven mitt jacket I have long-associated with Thanksgiving. Perhaps it’s the colors?

I got the Whole Foods Vegan Thanksgiving meal again, the one by Chef Coscarelli I got a couple of years back. It is a great value considering how long I spent in the kitchen last year making everything from scratch. I like to alternate effort levels! Of course, I did bring dessert. That will be a separate post.

Coconut Sweet Potato Casserole: Sweet potatoes folded together with coconut milk, winter spices and sweet-tart cranberries, topped with marshmallows and a crunchy streusel topping; Miso Creamed Greens: Sautéed lacinato kale tossed in a creamy, white miso cashew sauce with roasted garlic; Cremini Mushroom Roast: Roasted mushrooms blended with onions, celery, garlic, tempeh and Jalapeño Cornbread Dressing: spicy jalapeños, corn, onions and celery. So very delicious…

But I forgot the gravy in my apartment’s fridge! Ugh!
