I love food names that have propositional phrases. And ever since I saw this post, I wanted to try a vegan version of a Frog in a Hole slash Egg in the Basket! I whipped up this super-easy chickpea omelet base, chopped some fresh veggies and picked up some VioLife provolone to make it happen. To follow, a little time lapse of the process and some of the finished product on the wrong plate. I gotta do this again with some thicker bread!
