Raw Blue Spirulina Cups

I really am trying to go easy on sugar. But the struggle is real. In an effort to find a healthy middle ground, some blue spirulina raw cups. Creamy and delicious, I will definitely whip these up again.

Crust:

100 grams cashews
100 grams pecans
50 grams almond flour
180 grams soaked medjool dates, pitted

Blue Layer:

1 cup cashew nuts
1/2 cup full fat coconut milk
4 tbsp maple syrup
2 tbsp coconut oil, slightly soft
2 tsp vanilla extract
1/4 tsp Blue Spirulina Powder
1/8 tsp salt

How-to:

1.) Soak dates for an hour. Make sure to pit them if they got pits!

2.) After, add the rest of the crust ingredients and process in a food processor until crumbly. Press into the bottom of cupcake liners in a baking pan. Put pan in the fridge to set.

3.) In high speed blender, process all the ingredients for the blue spirulina layer until smooth.

4.) Pour until cupcake liners and allow to set.
