Pantry Turnover: (Criss Cross) Applesauce π

As a teacher, there is often cafeteria snacks in my fridge. I hate seeing it wasted and my students know that I take home the unwanted sliced apples and applesauce for baking endeavors. Despite teaching at home now, my applesauce stash was still substantial. I decided to make an applesauce cake… with strawberry banana and cherry flavored applesauce. π

I adapted this recipe but cut the sugar by 1/3. That’s because I overlooked that these containers were unsweetened. I just assumed they pumped sugar into the applesauce… you know, for the kids. I also added banana-flavored walnuts that were recently sent with my VeganCuts box.

I tried to compensate a bit with this way too watery sweet glaze.

In the end, I swear it tasted like something I made in Home Ec. in High School. This is a good thing! Perfect with coffee in the morning. I may also use for a parfait layer as I have apples and pears I need to utilize.

Not my greatest, but certainly better than staring at that applesauce into 2021. Hm, what to turnover next?
