Overnight in Huntsville, Alabama

Overnights are always fun for me. There are always things to take pictures of and I have no qualms about exploring the stop on my own as I am a very seasoned solo traveler. Sometimes the crew wants to go get dinner together and that kind of dampers my excitement. Solitude is not only joyful for me, but it is necessary when I have to exist in a socially taxing environment. So I savor the me time imparted onto my work responsibilities (being stuck in a confined space with many people).

Was bummed about my initial meal choice… so bummed I can’t even recall the name of the place! They used to have a bunch of vegan options, but have since changed the menu. So I had to get a salad. So the dressing was really damn good but it was severely lacking. And what kind of eatery doesn’t have avocado around?! Anyway, here is the salad.

As I needed sustenance, I ordered some vegan tacos to my room from Condado Tacos. They were pretty outstanding but partly because I put them together from their build-your-own menu. All restaurants should do this because so often there are components of other dishes that can be put together to create a good vegan option.

One taco had Thai Chili Tofu, rice & beans, onion, cilantro, pickled red onion (I want all the onions) and a pineapple salsa (which also had onions!). The other: Veggie Chorizo + Poblano, rice & beans, tomatoes, jicama & cabbage slaw, red cabbage and a tomatillo salsa. Both amazing on soft flour tortillas.
