Jack-O-Peppers

These adorable little stuffed bell peppers wanted to say “hi.” They began, like many cooking endeavors do, walking past my favorite Turkish produce spot on the way home from the subway. I saw that special bags of, I presume, older peppers were just two bucks. I knew these bright orange ones wanted a chance to be festive. And it was a way to use them all immediately.

You can really stuff them with whatever you have around. Though I wished I had golden raisins for a pop of sweetness. I used quinoa, baby bella mushroom and some tempeh I marinated.

They really seemed to grow happier in the oven!
