If Jiffy Cake was Vegan

The vegan options at Copiague Bakery are the kind of vegan options I love. Unpretentious and unlikely vegan options that seem available quite randomly. I arrived thinking I’d get a simple cupcake and be on my way… but their sweets grabbed me by the hand in a stroll down memory lane.

There was a lot to choose from. There were two types of crumb cake…

…brownies

And these “banana squares”… I picked up one of these and it sustained me through the evening… which was long as I attempted to capture the Geminids meteor shower.

Couldn’t wait to sink my teeth into this thick fudgy frosting. So it struck me at first taste–the cupcake tasted like… Jiffy Cake. As one of my first loves as a child cake lover, Jiffy Cake is ingrained in my food memory. Something about the thick chocolate frosting giving way to a pale, delicate, subtly flavored cake. This frosting is a million times better than a tall, thick waxy buttercream that I always wind up wiping the majority off.

On the left, that banana square. Because it was too dark to capture when I devoured it bite by bite through the evening, I’ll just tell you… it was amazing. Sure, it’s that frosting but I loved the cardamom, the banana taste that wasn’t banana bread-y.
