Carob & Chocolate Chip Cookies with
Eddie’s Organic Dark Chocolate & …

When I first went vegan decades ago, carob chip cookies were all I could find. The chips of mystery were a dull, almost frosted brown and not very tasty. And since then, I don’t think I ever had another carob chip cookie as I associated them with the dark days of no (or dissatisfying) vegan options of the mid-90’s.

Flash forward many, many years later… discovering the delightful connection of a colleague to the delicious vegan treats my friend introduced me to from her new city of residence, I had a sampling of carob from Eddie’s Dark Chocolate & …! I was excited to try carob once again, now that years have gone by and standards for vegan food have sky rocketed.

Eddie’s carob had me at first whiff, the striking scent of cacao butter says there is no way this cannot be absolutely delicious.

The little bit of cinnamon, which sneaks into a bite, would prove a perfect compliment to the flavor profile of my most favorite cookie recipe. For contrast, I threw some regular chocolate chips in the mix. The cookie dough, on its own, was sublime.

Of course I added some big salt flakes to enhance all of those nuanced flavors.

The gorgeous result. If these aren’t the most dreamy looking cookies, then I don’t know what. (Say like Mrs. Robinson)

These might be the best version of chocolate chip cookies I’ve ever made. Thank you, Eddie, for showing me just how good carob can be! I can’t wait to include it in another recipe.
