Camping Eats

I’m really excited to go camping this weekend and have the season’s first starshoot. But I’d need some nutritionally dense eats to sustain me through a packed itinerary. I played around with this recipe, so these are chocolate banana tahini flax gluten-free muffins! Say that five times fast. They’re packed with almond flour so I stuck an almond on the top to tell the world that they’re nutty.

They’re fudgy and satisfying.

I love when the cake is darker than the chocolate chip…

Now for some savory. Tweaking this recipe, I used up all of the produce I needed to use up. Some easy gluten-free crust lining single-serve lava cake molds.

Tofu mixture really needed the addition of black salt

Mixing in the sautΓ©ed sweet peppers, onion and kale…

And topping with the roasted tomato and Chinese broccoli. I really do have this much produce on hand on the reg. Look how pretty!

All cooked! I will likely be eating these cold.

Not super set, but that’s okay. I didn’t want to add any yucky thickener ingredients.

To the start of the adventure season! It’s going to be a good one!
