Last Day in Las Vegas

The last day of the desert adventure… before I would spend hours in the air waiting for New York City storms to clear the atmosphere before landing in Buffalo to refuel and finally seeing my bed in Brooklyn at 2:00 am as opposed to 8:00 pm as originally scheduled. It was a rough ride back to the East, but I am very patient. As long as I return to the ground safely at some point, I am good just sitting still. It was kind of shocking to see how poorly some behave in the circumstances. Anyway, here are the last day highlights…

Road trip hair

A delicious meal at Hola Mexican in Las Vegas. Clearly marked vegan options, a super knowledgable server and no packaged products made this a very memorable meal!

Libations for surviving the desert

Fresh and delicious–Guacamole Madre’s Style is their traditional guac with pomegranate seeds+toasted pepitas, Needing some fresh, raw nutrients, I tacked on the Jicama + Pepper + Cucumber + Tajin

Closer… and I’m drooling looking at this spread

Achiote Jackfruit & Plantain Enchilada along with roasted corn and black beans. This was so fantastic. Just what I needed.

A quick stop to The Pinball Hall of Fame. They had great vintage pinball games. As with many vintage things, I really enjoy trying to capture that old feel in pictures.

Of course I just had to stop at Ronald’s Donuts for some of the best vegan donuts in the country–and maybe the first! I enjoy one on the floor and packed the other to enjoy back in my apartment. And that’s exactly what I did when I got home finally.

What a ride! I hope to get back west sooner than later. It has heart containers I need to collect.
