This sign caught my eye as I exited the subway en route to work. Just read it and you’ll understand why I put a stop at Prospect Provisions on my calendar for the next day. It’s got may favorite compound word: housemade.

Now I have visited this spot before, satisfied thoroughly with their permanent vegan option, the Panelle. The guys care so much about quality, not lazily throwing together a combo of packaged stuff. Their vegan options get the same love, the same care as the rest of the menu. And that makes them a blessed vegan sandwich makers…

As good as it looks, the carrot is transformed into a savory delight–packed with flavor. There is nothing like this sandwich anywhere in NYC.

This was one of those eats I snapped a picture each bite thinking it would capture the deliciousness my mouth was experiencing.
