Anti–Gel Coloring Valentines Eats

I have plenty of chickpeas leftover from making marshmallows… and with more beet puree to utilize, beet hummus was the natural choice. Once again the hue blows the mind. Sorry I didn’t write down exact measurements. I usually just eyeball making hummus–chickpeas, beet, and salt then drizzle in olive oil until it looks nice and hummus like.

The light in the kitchen (LED) made it look neon!

Keep thinking of this Portlandia skit and chuckling to myself.
