Back to Rice Crispy Treats & School

I am so happy to be back in the classroom. Trying to teach special learners remotely was next to impossible. I made more progress in one day in-person than in weeks of remote. And feeling a renewed sense of purpose, one that had been dwindling since November, I realize how much I loved and missed teaching. Actual teaching. Of course I had to welcome my kiddos back with a sweet treat. I hadn’t made Rice Crispy Treats with Dandies vegan marshmallows for a few years now. So, an easy recipe while I listened to a math course after school.

Because Kellogg’s Rice Krispies are not actually vegan, containing sheep-derived Vitamin D3, Whole Foods’ Brown Rice Crisps are the perfect cereal for the recipe. They’re also GMO-free. Not pictured, coconut oil. This really is a 4-ingredient treat!

Minis melt more quickly. “Because: Science.” I say that a lot as it is often appropriate.

It’s beginning to look a lot like Crispies.

I like to keep some big chunks of marshmallow.

Ok, and me. I likely had the most.

So this boy had never had the treat before. He began to nibble it nervously. By the end of the day he had declared the treat delicious and got a second one which he savored jubilantly.

This was the missing piece! Seeing others enjoy my treats. So I have another treat planned for Monday.
