Two Pad Thais

So carb cycling is officially a bit too much for me to handle right now. Meal prep takes an entire day! Because of this I have been shirking all other things on my weekend to-do list (i.e. taking pictures somewhere). I suppose I can just go for a meal for the weak that has a balance of all macronutrients?

Anyways, here are the two versions of Pad Thai I made for this week. One with rice noodles, one with kelp noodles. They needed some browned tofu from the cast iron!

The colors. I just can’t limit my vegetable intake… all of ’em, all the time.

Basil and scallion because my favorite corner store didn’t have any cilantro.
