Zucchini Bread

Could it be I’ve never made zucchini bread? Yes, it’s true. But since I had some zucchini scraps from making a batch of zucchini lasagna, it was about time. I used this easy recipe but cut the sugar to a third of the recipe and added another 1/2 cup of zucchini. It was light, delicate, sweet enough and delicious.
