Yet Another Fantastic Vegan
Chocolate Chip Cookie Recipe

I am always on the hunt for a new and unique vegan chocolate chip cookie recipe. And this one from The Big Man’s World blew me away. It has a nice depth of sweetness with a buttery texture… along with being a one bowl recipe. So for easy reference, I am posting his recipe here with just some small tweaks.

  • 1/3 cup sugar
  • 1/3 cup light brown sugar
  • 1/3 cup coconut oil, solid but softened
  • 1/4 cup plant milk
  • 1 teaspoon vanilla extract
  • a few splashes of water, as needed
  • 1 1/4 cup all-purpose flour sifted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • vegan chocolate chips, as desired

  1. Preheat oven to 350F. Line a large cookie tray with parchment.
  2. In a large bowl, combine sugars with coconut oil and mix until glossy and uniform.
  3. Add in your plant milk and vanilla extract and mix well.
  4. Add flour, baking powder, baking soda, and salt and mix well. If the dough is too dry add a small splash of water until a good dough consistency. Then fold in vegan chocolate chips.
  5. Using a cookie scoop, space apart dollops on the lined tray.
  6. Bake for 11-13 minutes, until the edges are slightly golden.
  7. Remove from oven and let them cool on the tray completely.
