Yet Another Fantastic Vegan
Chocolate Chip Cookie Recipe

I am always on the hunt for a new and unique vegan chocolate chip cookie recipe. And this one from The Big Man’s World blew me away. It has a nice depth of sweetness with a buttery texture… along with being a one bowl recipe. So for easy reference, I am posting his recipe here with just some small tweaks.
- 1/3 cup sugar
- 1/3 cup light brown sugar
- 1/3 cup coconut oil, solid but softened
- 1/4 cup plant milk
- 1 teaspoon vanilla extract
- a few splashes of water, as needed
- 1 1/4 cup all-purpose flour sifted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- vegan chocolate chips, as desired
- Preheat oven to 350F. Line a large cookie tray with parchment.
- In a large bowl, combine sugars with coconut oil and mix until glossy and uniform.
- Add in your plant milk and vanilla extract and mix well.
- Add flour, baking powder, baking soda, and salt and mix well. If the dough is too dry add a small splash of water until a good dough consistency. Then fold in vegan chocolate chips.
- Using a cookie scoop, space apart dollops on the lined tray.
- Bake for 11-13 minutes, until the edges are slightly golden.
- Remove from oven and let them cool on the tray completely.
