Ya Put da Lime in da Coconut…
with Chia seeds πŸ₯₯

This is the best thing I’ve eaten in quite some time. It’s sweet, creamy, zesty, fresh, light and vibrant. But it is also easy and versatile. Consider this a semi-base. Thanks to The Greek for this delicious version. I can’t wait to make it with the key limes I’m going to bring back from Florida!

Lime Coconut Chia Pudding

1 can of full fat coconut milk
1/2 cup coconut creamer
1/4 cup good lime juice
1/4 cup maple syrup
Zest of one lime
Generous pinch seas salt
1/2 cup chia seed

Mix all but the chia seed in a large bowl.

Add the chia seed and stir vigorously for a solid 2-3 minutes.

Divvy into serving containers and let soak overnight.

Garnish accordingly. Best with chili-sprinkled ripe mango and a lime wedge.
