Whole Lava Love
Vegan Chocolate Molten Lava Cake πŸŒ‹

February brings a couple of special birthday baking endeavors… and I aim to please. Though a molten lava cake wouldn’t be my first choice of a cake, I am excited by a cake I have never attempted before. And it was the birthday girl’s request. But first, a low stakes trial run so I can get the recipe right.

Dry Ingredients

100 grams rolled oats, ground into flour in food processor

50 grams almond flour

70 grams coconut sugar

20 grams black cocoa powder

1 tsp baking powder

1/4 tsp baking soda

Pinch of salt

Wet Ingredients

2/3 cup plant-based milk

80 grams apple sauce

1 Tbsp apple cider vinegar

1 tsp vanilla extract

Lava: a chocolate bar, broken into squares.

  1. Preheat oven to 360Β°F and grease mold. (I bought these. This recipe is a perfect fit for using all four. I overloaded three and one spilled over. Grease well, including the rim.)
  2. Pulse all dry ingredients in aΒ food processor.
  3. Add the wet ingredients and pulse again until combined.
  4. Pour the mixture into the molds, then push 2 of the chocolate pieces into the center.
  5. Bake in the oven for about 15 minutes.
  6. Let cool for about 10 minutes before removing from the mold.
  7. Dust with cocoa powder and your preferred garnishes. Then spoon on in!

What an easy recipe! And I love that it’s all done in the food processor.
