While You Were Sleeping

I’m taking it back to 2007 for this title reference because it ties into my lunch for the week in two ways. A beautiful adult lullaby by Anthony “Psycho” Perkins’ son, Elvis Perkins who sings of all the magical activity inside the overnight, like my crockpot making the first batch of chili for the season.
Plus, time changed back to Standard. Ok, I am forcing this fit. I just really love the song.
My mom gave me her old Crockpot and this is its maiden meal. I worried slightly about its electrical parts since it is decades old… especially since I’d be sleeping while it was doing its thing. But I woke up to the delicious smell of simmering flavor-packed chili. A chili I will write the recipe for next time.
Lotza peppers. Crockpot prep is easy because it can happen all at once, in one swift blow.
Ready for sleep-cooking.
Good morning, hot stuff.
Lunch, and likely next week’s too, is set. But first, I’ll need some garnishes and accompaniments.
A batch of “VV” cornbread. Because I can’t have chili without cornbread. I used an easy recipe from Nora Cooks. At first I thought this was too sweet, but it works well with the heat of the chili.
Super easy recipe and I bet you have everything you need in your pantry.
After a quick batch of tofu sour cream, I had to have a sample.
Job well done, Crockpot.
