What’s on the Vegan Table?

I got Vegan Table for Christmas last year and have barely cracked its spine. Looking for “week eats” to help stretch out my swiftly diminishing summer funds, I whipped up a couple of yummy recipes I thought would last the week. First, I wanted a hearty potato dish, because potatoes re-heat so well, but also wanted something a bit different than my usual no-fail but uninspired roasted potatoes. I selected Colleen’s Potato & Seed Spread, a versatile dish that can be a hearty side, a spread or a filling. I will eat it in a pile, like mash potatoes. It’s got ground sunflower and sesame seeds and a lot of nutritional yeast along with pureed potatoes. I topped the dish with some fresh tarragon before baking so it looked a bit less like baby food.

At week’s end I may opt to use the remaining as a filling, especially since VwaV has got a knish recipe and Isa’s recipes never fail. And really now, can little old me eat 20 servings of a heavy duty potato concoction in one week? All my pants, which have recently taken to squeezing my belly much tighter, will tell you, “Yes maam.”

And what do you know, I wound up also preparing the next page’s recipe as well: Southwestern Tofu Burgers. I don’t know where I went wrong on these but they were a bit bland. Yes, with cumin, chili powder, onion powder, paprika and cayenne… bland. Perhaps I did not squeeze the brick of thawed tofu enough and its innards watered it all down. But I am not fretting to much. I have a good amount of pesto and Vegenaise, as well as a fresh loaf of savory zucchini-lemon bread to flow in the ebbs!

I’m freezing some up to store over at the Electrician‘s because my vegan grill has been lying in rest way too long over there. Plus it beats shelling out for store-bought frozen patties.

And there is my colorful dinner, a preview for the weeks’ snacking. Bread was not ready in time to house these patties but vibrant piles of tastiness more than made up for it. Happy Sunday all.
