Red Velvet Cupcakes

Hoping to woo a vegan this Valentine’s Day… or hoping to woo yourself? For your consideration, a series of vegan treats that aim to please! And boy do vegans deserve it for all the good they do. So bask in the red gel coloring that is this series: Vegan Victuals Valentine Inspirations. π
I had to start with red velvet cupcakes! In my view, these are the sexiest of all cupcakes. Deep red, cocoa, tangy cream cheese buttercream: that flavor combination is hard to top. This recipe is very easy… and doesn’t require any weirdo ingredients that may frighten a baker who is only baking because of love… for a vegan person. Not a love… of baking.
Other considerations: You’ll also need the cream cheese frosting recipe here. And get gel coloring from somewhere, not that liquid food coloring in the 4-pack. And did you know most sprinkles are made with bugs? You can read my very old post about it here. (You can find Wilton gel coloring easily at Michaels; they’re reported to be vegan. Americolor is a declared vegan and they have a lot more colors and baker cred.) Feel free to skip the sprinkles. (This ain’t no 4th grade bake sale!) But look into this list if you want to impress the vegan with thoroughness. In simple, the more tabs you have open during your baking endeavor, the more you truly love him/her/insert PGP here. Veganism requires constant forethought. If you’re overwhelmed already remember: Attending to the above will show you understand your vegan’s love language…. forethought is foreplay.
Now if you want to get fancy–and it is an occasion to get fancy–go to cake supply store and get these beautiful edible leaves from Crystal Candy. They are a small touch that really elevates the final product. And you care that much, don’t you? Remember that words without action is just manipulation. I forget where I got that. I suppose words without action can also indicate one or many layers of dysfunction that may also impede a healthy relationship. π© π© Either way, the end result is the same: trouble with a lowercase “t.”
The swirling pink and red is just not fully blending the gel coloring. Let a little of the red velvet peek out from under the frosting. And I used some of the sprinkles I had laying around. Ain’t that pretty?
If someone gave me this: swooon! Remember, little details are extremely important if this treat is to be a reflection of your love. But it is just in the cognizance and the attempt that seals the deal–execution is less important. In fact, poor execution just might be just as adorable.

It really is a great recipe. Great texture and flavor. Just be precise in your measurements. Using a scale is not only the most precise method of measuring, it’s also easier and creates less dishes to do. If you don’t want to pick one up, borrow one from someone who needs a scale for totally legal activities.
