Maca & Carob Chocolate Chip Cookies

The final sweet treat for my superfood box is a triple threat: Maca… carob… and chocolate. Three superfoods with spectacular health benefits.

Though they are boring shades of brown, these cookies are simply divine in taste. The key is to not over-bake them and to let them cool patiently and then put them in an airtight container to sit overnight to deepen their flavor. Similar to many cookies I guess, so let’s hear how they are different.

It’s the Maca. Maca is actually classified as a cruciferous root vegetable, similar to a turnip or radish. It boasts some amazing health benefits. It helps with stress management, like many adaptogens. It increases dopamine levels (a good thing!), increases energy, increases bone density, boasts libido, increases sperm count, and helps with symptoms of menopause symptoms. That’s quite a load of health benefits!

So here, observe the butterscotch-y powder with carob and chocolate in these spectacular cookies.

Maca & Carob Chocolate Chip Cookies

Wet Ingredients

  • 1 cup sugar
  • 3/4 cup dark brown sugar
  • 1/4 cup light brown sugar
  • 1 cup coconut oil softened, not melted
  • 3/4 cup plant milk
  • 3 teaspoon vanilla extract

Dry Ingredients

  • 3 & 1/2 cup all-purpose flour
  • 1/4 cup maca powder
  • 1 & 1/2 teaspoon baking soda
  • 1 & 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2/3 cup vegan chocolate chips
  • 3/4 cup chopped carob

1.) Preheat oven to 350F. Line a large cookie sheet with parchment paper.

2.) In a large mixing bowl, combine sugars with your coconut oil and mix well. Then add your plant milk and vanilla extract. Mix well.

3.) Add in all your dry ingredients and mix well to form a dough. Fold in the chocolate chips and carob.

4.) Using a cookie scoop, scoop dough on the lined tray and top Maldon sea salt flakes.

5.) Bake for 10-11 minutes, until the edges have gone slightly golden.

6.) Remove from the oven and let cool on the tray for 10 minutes. Transfer them to a cooling rack to cool completely.
