Vegan Swiss Fudge Cookies

I’ve always wanted to try the vegan recipe for Swiss Fudge Cookies from Vegan Cookies Invade Your Cookie Jar. The Stella Doro ones were a favorite of mine when I was a kid. The PPK calls them Starry Fudge Shortbread cookies. The recipe is a bit involved, the kind of cookie recipe you don’t really want to spend your weekend hours doing–unless you had two months of weekend. With time on my side, I threw down in the kitchen.
The dough was thick… and my pastry bag was cheap and porous. But I managed to pipe these cuties well and give them a nice concave recess for the fudge-y ganache.

I guess my fudge was also thick. This was my fault as I winged it on the stovetop. I was also a bit uneasy about the chocolate seizing. Maybe I watch too many baking competitions on the television. In the end, I was delighted with how these turned out!
Luckily I had a place to offer them up this day, otherwise I would have surely eaten them all–one-by-one, slowly.

I would love to veganize these, an old kind of Nabisco cookie I hoarded and binged in my childhood. Memories of eating these cookies are so vivid. I’m delighted to see that others feel just strongly about them.
