Vegan Matcha Chocolate Chip Cookies 🟢

Matcha is such a beautiful shade of green… and is a nutrition powerhouse. I wanted to try a chocolate chip cookie with the superfood and thought the Halloween season was the perfect time. So behold, a beautiful witch batch of matcha chocolate chip cookies.

Vegan Matcha Chocolate Chip Cookies

Wet ingredients

½ cup (130 g) raw almond butter

¼ cup + 3 tablespoons (130 g) maple syrup

3 tablespoons (35 g) melted coconut oil

½ teaspoon vanilla extract

Dry ingredients

¼ cup (33 g) all-purpose flour

¼ cup + 2 tablespoons (40 g) blanched almond flour

2 tablespoons (15 g) tapioca flour

1 tablespoon + 2 teaspoons (10 g) matcha powder

½ teaspoon baking powder

1/8 teaspoon baking soda

¼ teaspoon fine sea salt

chocolate chips, as desired

  1. Preheat to 350ºF. Line a cookie sheet with parchment paper.
  2. In a medium bowl, mix wet ingredients until smooth.
  3. Sift in the dry ingredients. Stir to combine, then stir vigorously for incorporate fully. Stir in the chocolate chips until evenly dispersed.
  4. Scoop dough onto the prepared cookie sheet. If desired, top each cookie with a chunk or two of chocolate.
  5. Bake the cookies on the top rack of the oven until golden and puffed for 10-14 minutes.
  6. Remove the cookies from the oven and slide parchment carefully onto a cooling rack. They will firm up as they cool. Enjoy!
