Vegan Food in the Poconos & Scranton

Though Cove Haven did have a vegan option for their fancy dinner service, I thought it a bit pricey for not knowing what they would throw together. I also wanted to try some of the surrounding area’s vegan options. There were a surprising amount of them around and I hope to return to continue reporting on the vegan options I missed.

In Waymart, Pennsylvania is Mustard Seed Cafe, a farm-to-table eatery with labeled vegan options. We headed here before check-in, in need of a breakfast bite.

The Hearts of Palm Cakes are gluten-free and provide some crabiness by way of breaded hearts of palm, nori and Old Bay spice. They were a bit mushy but yummy.

They kinda felt more like a potato croquette. That is not bad at all!

I got the Hash and Tofu Breakfast Bowl, roasted potato and vegetable hash over sauteed kale topped with seared tofu. It was good but, overall, lacked seasoning and punch.

Some vegan treats at the register I didn’t feel ready to try, having just come off a cleanse. I’d love to come back to try their vegan pancakes. Service was great and the place had such nice vibes.

A “Dunch” meal in the adorable town of Honesdale, Pennsylvania. We went for Vietnamese food at BΓ  & Me. Because I gotta have as many summer rolls as possible! Plus they had a neat Happy Hour special that sounded perfect.

First, the Summer Rolls: vermicelli noodles, mixed greens, mint, cilantro, cucumbers, pickled carrots, and a warm tofu wrapped in rice paper and served with peanut sauce. Delicious! And clearly freshly made given the warm tofu inside with the cold veggies.

My special… a noodle bowl with tofu along with a garden roll. Veggie dreams right here! Much like the summer roll, but more and unwrapped.

A neat display at the only coffee shop around: Black & Brass Coffee Co. It was a really cool coffee shop.

Next we were in Scranton, where we would say goodbye. I wanted an easy food option, so I chose Eden Vegan Cafe. First, a red velvet cupcake. Cake was better than I expected… but too much frosting as is often the case.

Lunch is served. Notice me trying to eat slightly better ordering the steamed veggies. I wish I hadn’t as they were mush!

Because it was housemade sausage I got the sausage and peppers sandwich. And those were the only two ingredients in there! It really needed a sauce or some moisture as the sausage was quite dry–but very tasty! Love those fennels seeds.

The sausage was so good that I kept on taking pictures of it!
