Vegan Eats Near Zion National Park

Peekaboo Canyon in Kanab, Utah offers clearly labelled vegan pizza and burger options. Shying away from packaged vegan cheese, I got the Something Special with their housemade basil pesto, roasted tomatoes and artichokes. It was so good–reminded me a bit of an old staple I used to eat years ago, Amy’s Roasted Vegetable Pizza… except fresh, with a crispy thin crust and placed in front of me with great personable service.

I had to also grab a slice of their best selling in-house vegan carrot cake for motel lounging. This slice was perfection–spice-packed, moist, tangy cream cheese frosting. Scrumptious! The counter man also threw in a slice of their vegan zucchini banana bread free of charge. Because that’s how awesome the service was.

Right outside of Zion National ParkΒ In Springdale, Utah is a relatively new spot FeelLove Coffee. Though this place is more of an outpost of its St. George location on the way to Zion, its limited menu offers vegans some sustenance–though I wished I could have had some of their vegan breakfast items from their full menu.

Because of park proximity, they offered more a grab and go style option, a Vegan Breakfast Burrito. I enjoy breakfast burritos a lot but they aren’t very photogenic. I’d be lying if I said this wasn’t a consideration of my menu choices sometimes! But here is my Breakfast Burrito.

Inside… deliciousness a step above–turmeric tofu scramble, crumbles of vegan sausage, cashew nacho cheese and potatoes.

As I waited for my burrito, I took in the sights. Imagine this being where you work. Oh I am.

And I have to mention this… house made vegan soft serve. Shout it from the rooftops! The days of not saying “vegan” with the assumption it will scare people away are long gone. Eateries know it is what reels ’em in now. We made a movement and the world is catching up.

I sampled the chocolate… so rich and fudgy. It was amazing, more like a gelato. It was so rich the sample was all I needed. They also had lemon.

But I also got a lemon poppyseed donut. Cake donut–soft, great flavor, not too huge. It was a great breakfast from FeelLove Coffee.

My next morning breakfast was at Cafe Soleil. This is one of those quintessential outside-a-National-Park eateries. Healthful and mindful eclectic options catering to all eaters, great views, hippie vibes. Well yes, I don’t mind if I do!

And the also-quintessential vegan breakfast dish: the tofu scramble. It’s O.G. veganism, so it is taken on by many omni eateries. And what else could a vegan ask for. It’s got your protein, your veggie mix-ins, your potato base.

This was a really nice start to the day.
