A special delivery from West Palm Beach–Eddie’s Dark Chocolate‘s delicious Vegan Caramel Turtles. Made from scratch with clean and straight forward ingredients, I had forgotten how much caramel from dates rocked my world. After devouring these treats, I had to try making my own again.



Having just hit the Indian grocer for a large quantity of Medjool dates, I was ready to experiment with a caramel. Though this recipe below was a bit too ooey gooey for holding its form, it was indisputably amazingly delicious. So here is the recipe to tinker with for different purposes. This texture would be ideal as a cake filling or spooned upon a firm base, like a cookie. In fact, I now have a fantastic and complicated cookie idea I will have to embark upon. Stay tuned.
24 soaked Medjool dates, pitted
2 TB maple syrup
2 TB coconut oil, melted
3 tsp vanilla extract
1 TB water
Don’t use any other kind of dates. They just don’t cut it. Big fat Medjool dates, yes please.
Instructions: Blend it all up.

Date caramel perfection.

I got this bag of pecans while the price was right on my road trip down south this past summer. I don’t know, however, that’d I’d opt to buy unshelled pecans again. I wound up spending a good amount of time ruining most of them with a pair of pliers.

Improving a bit, I did wind up salvaging some whole pecans to act as a base, Eddie’s style.
