Vegan Canarsie (Part 2): Vegan Cupcakes Take Over Canarsie

Because my students are so darn good, I thought I’d surprise them with some cupcakes. I also thought that PPK’s Isa, who I have recently learned grew up in Canarsie, Brooklyn, would appreciate my spreading VCTOW‘s love back in her hometown community. The golden cupcakes came out a bit too moist this time around, as I opted for oil over Earth Balance, but were still delicious. They were a big hit in class! Many students tried to finagle seconds.

The only complaint I received was about the frosting which, admittedly, was a bit out of the ordinary. The icing concoction was close to pudding and hardened a bit waxy off the stove top. I will definitely experiment with this recipe again as the texture fascinated me.
