Using the Apple Haul, Part 2 🍎
An Apple Strudel

For my second usage of our haul of apples, a shockingly easy vegan apple strudel! The recipe from Connoisseurus Veg utilizes store-bought puff pastry dough and a delicious filling mixture of apples, sugar, raisins, pecans, rum, cinnamon, vanilla and lemon juice. I sliced them thin on the mandoline, though you can certainly cut them bigger and by hand for a more hearty filling. Let’s look:

My totally uneven rolled out pastry dough.

All wrapped up like a mummy.

Browned nicely. I gave Dufour Pastry Dough a try. It did not rise as much as I anticipated.

But it was still a lovely strudel that I would try again with other flavor combinations!

In the end I cut the strudel in half so one could go to my guy’s dad and one we can enjoy.

Oh, these apples are rocking my world! What next?
