The week is easier with sweet snacks.
A baby vegan cupcake from Sprinkles…
And a bag of almond cookies from High Hopes Vegan Bakery, the ridic-delish Etsy shop based out of my own Long Island. 
Besides being the type of gal who orders herself a bag of scratch-made vegan cookies for no reason, I am also the type of gal who orders herself a bag of scratch-made vegan cookies for a reason: Pure nostalgia.
When I was in high school, I’d walk to this bakery near by for cookies just like these. I’d order a half a pound of cookies and would eat them all slowly with many internal “mmmm”s. 
It’s funny how those cookies are burned in my memory, like a lost love. I remember speaking to the counterperson shyly, remember thinking how the cookies were worth all the money in my Kero-kero-keroppi wallet, remember seeing the scale increase as I asked for a couple more in the box. The start of my love of sweets…
