Sweet, Sweet Nostalgia
at Copiague Bakery, Long Island

On the way back to Brooklyn, a sweet bite from Copiague Bakery in Copiague. Last time I visited I was impressed by the selection of vegan goods. They tapped into a nostalgia that isn’t activated easily. This time was no different with a selection of bakery cookies–the kind not easily found in vegan form–with a delicate texture, familiar look and the flavor of my past.

So when I was in high school there was a bakery close by. I used to go after school often to order a quarter pound of a cookie so very ingrained in my memory. It was a sandwich cookie formed with two convex cookies, filled with a firm, fudgy chocolate ganache. The cookie–soft but also firm with a subtle cream cheese flavor colored in either light pink, green, purple and blue then drizzled in chocolate. It wasn’t a complicated cookie, but I fell in love with it. And it was a specialty to that bakery… that is no longer.

So I was so exited to see a similar looking cookie–not a sandwich–but pale pink and drizzled in chocolate… and vegan! I bought a half a pound of their cookie options and felt like a glutton after eating all of them in a relatively short period of time. 😬

There were other vegan goodies too.
