High End Vegan Perfection within the Canyons

Every once and a while you need to splurge on yourself. You are, after all, your most important supporter. So on this night, watching the pink landforms catch the last rays of the day’s light on their outdoor deck, I showed myself how good I can treat myself–at Stone Hearth Grille in Tropic, Utah.

But I knew I was going to do this in advance. With the only food reservation made in my trip planning, I had a hunch. The place was pretty magical… as you will see.

My appetizer: The Roasted Beets–with dreamy dollops of tofu cream, a spicy jalapeno and almond salsa and dill. Just look!

It was one of those dishes you never wanted to end, so you take a picture in the middle of it too.

Before my entree, this happened. And the whole deck was abuzz with delight…

My entree: Roasted Poblano Relleno stuffed with whipped tofu on a bed of subtly pickled red cabbage, dressed avocado slices, salsa verda, sliced apple and a delicious assortment of toasted seeds, topped with cilantro. Can you tell they care about quality? This is eating–elevated–in Utah.

Can you believe the beauty and care? Stone Hearth Grille is a must-stop for any vegan traveling around Bryce Canyon. They even had a dessert option for me–a fruit crumble that would be topped with coconut cream! But wine/appetizer/entree AND dessert was too extravagant for this sun-crinkled worn traveler. Next time.
