Spice Girl

Having 3 cans of chickpeas emptied of their juice for my Angel Food cake attempts, I had to make chickpeas the star of my week’s lunch.  So my chickpeas took a scrumptious simmer in Vegan Richa’s Butter Masala recipe after a quick walk to Balady Foods in Bay Ridge.  I love that I live in a neighborhood with global food options!  And with grocers like Balady, a Middle Eastern Halal market with spices I need for cooking different tasty cuisines in my own kitchen. This is a great find for me and I am excited to have a go-to for Middle Eastern delicacies. Like look at all those dates in the window!

My chickpeas stewing it up. I also threw in the whole tub of spinach. Because–greens!  So spicy and perfect for my cold–double the nose running. 

Oops, I ate one of my lunch portions already.  So good, as Vegan Richa’s recipes are always.  A protein-packet lunch with millet on the side for a longer week at work. Bring it!  Wait, no. I want to get a good night’s sleep first.
