Coconut Pumpkin Curry

With ample pumpkin puree ready to rock, this week’s lunch would be a pumpkin version of curry, my go-to lunch concoction. But it’d be Vegan Richa‘s guidance that creates this creamy vehicle for all the produce I had laying around… and the ton of pumpkin puree just processed.

Creamy coconut milk and pumpkin puree. How can that go wrong?

Well, it can’t really. Add spices to coat the “Indian Trinity” — garlic, onion and ginger — and you got another foolproof road to deliciousness.

With my Misfits box just delivered, I put it to work.

It was a bit thin at first but got nice and creamy as it reduced…

Not too orange. I might increase the pumpkin next time.

Can’t see past all my garnishes! All’s well that’s dressed well sometimes. Also a millet cooked with pho broth. This is what happens when the VeganCuts box comes and I have random stuff to use up.
