Mom’s Birthday Cupcakes πŸ’

For my sweet Mom, sweet cupcakes… and a bouquet of flowers! In this case, same-same. Instead of the usual vanilla recipe, I tried this new one from Nora Cooks. Well, new to me. I love that it has aquafaba, vegan butter and oil in it, for flavor and for moistiness. I think this is going to be my new go-to. My family loved the cake and appreciated the pretty presentation.

I am totally in love with these Russian piping tips. If you’re wondering how my cupcakes look so pretty, it’s as easy as a quick squeeze and pull. These tips make it very easy. And there is a wide variety of beautiful flower types to choose from. I got a set of 7 to start which also included the mini leaf tip.

Trying them for the first time, I kept it simple. I didn’t bag up two different color frostings in the piping bag, though I did resist mixing them thoroughly so they could have a little white striations. I also tried just two of the tips.

Gel color helps them make an impact. So Spring-ish!

So pleased I didn’t screw them up! I let them set a bit after piping. Here they are in the fridge. So cool!
