Marshmallow Meringue Berry Cake

I’ll say it over and over… I really miss baking. So along with the tofu dinner, I wanted dearly to make a patriotic-hued treat for the 4th. So I brought the berries I had just bought in DC home to Rochester for this undertaking.

The very last thing of Apple Sauce from the NYCDOE! LOL I would have to use it in pace of yogurt that I did not have.

This impacted the texture a little bit.. .as did not using room temperature almond milk as it made the coconut oil all… solid

Nothing a coating of marshmallow meringue can’t fix
