Marching On

With a hectic weekend, a hectic upcoming week and a hectic next weekend… and the weekend after that and into Spring Break, I have to forcefully find moments to catch my breath. Even on my usual low key Friday I have to manufacture that Sunday urgency of taking care of business, as they won’t be much of an opportunity on for-real Sunday. So I made my next week’s lunch before this here week was even over. Mini omelets. Because nothing comforts and sustains like breakfast, it’ll be breakfast all week for lunch.
I used Isa Does It‘s recipe, which is easy peasy.

But I threw in some roasted vegetables, because they’re easy peasy too.

Now that lunch is done. . . Bring it on, weekend.
