Lunch from The Essential Vegan Air Fryer Cookbook

My parents got me an air fryer for my birthday. So sure! I put a vegan air fryer cookbook on my Christmas list. The result, my fantastic lunch this week. Flavor-packed and so satisfying, it would help the first full week of school in 2020 pass quickly to another weekend. Here’s what I made from The Essential Vegan Air Fryer Cookbook.
First, Cilantro Chutney. Easy and so very tasty–packed with cilantro freshness, fresh ginger, raw garlic, jalapeΓ±o and lime. I doubled it as I will do from now on, better utilizing my time by using my freezer.

Here is the potato base for the Crispy Indian Wraps. I decided on this recipe because of how much I love samosas. These were mashed with onion, lime, cumin, coriander, turmeric and cayenne.

My tortillas were a little small, so my wraps were not fully… wrapped.

After a quick airfry, they were ready to go! But first, an at-home test.

In the lunch version–a pile of millet and roasted okra. I dream of these in-between math instruction.
